Hakata Ikkousha is a combined Japanese words where “Hakata” is a district from Fukuoka Japan, and “Ikkousha” means “one happy place”. It was actually the vision of its founder and master chef, Kousuke Yoshimura, when he started his first restaurant in Fukuoka in 2004. And so in 2011, the Ikkousha franchise started to make its way overseas, with its first international branch in Jakarta, and currently has branches in nine countries across four continents.
Anatomy of Authentic Hakata Ramen
So what’s exactly a Hakata Ramen? Here are some of the characteristics of a Hakata Ramen for you to identify if its authentic.
1. Tonkatsu Broth
The broth is basically made by simmered tonkatsu or pork bone. They do the “Yobimodoshi” method to prepare the broth. No concentrates, no powders, and no artificial methods. The broth must result to a creamy, thick broth that is rich in flavor and texture.
2. Umami Bubbles
Another thing to check is the umami bubbles or the froth that forms on the surface of the collagen-rich broth. Tonkatsu ramen is sometimes dubbed as Tonkotsu Cappuccino because of the umami bubbles.
Another important element of a Hakata ramen is the noodle. The noodles served are produced in Ikkousha’s own noodle factory. It’s thin and allows more broth to be enjoyed with each bite.
Last element is the Cha-shu or the thin slices of braised pork which are tender and mildly seasoned, providing the perfect balance of texture and taste.
Variety of Ramen
Hakata Ikkousha serves several varieties of ramen in the stores. The original one is the Tonkatsu, which lets you experience the classic taste of the pork bone broth. Next is Tonkotsu Black, which features a black broth with a more intense, complex flavor because of the ma-yu or burnt garlic oil.
Another one is God Fire which is the spicy variant and is available in four spice levels to suit your preference. I got to try the Level 1, it’s a bit spicy for me but I love it! I never fell in love with ramen until I had this. Next they have Shio-Tonkotsu, a combination of tonkatsu and shio (salt). It is the lightest ramen according to them. The newest variant is Black Fire which is a combination of God Fire and Tonkatsu Black.
At Hakata Ikkousha, you can choose your ramen the way you want it. After choosing your preferred broth type, you will now then choose your toppings. You can either have your ramen only with its standard toppings (one slice of cha-shy, kikurage or black fungus mushrooms, and spring onions) or add ajitama (seasoned egg), or the special topping which contains ajitama and additional three slices of cha-shu. You can also indicate your preferred type of noodles whether hard, soft or normal, as well as the level of saltiness of the broth.
